Prunus persica – “Persian plums” have a global history originating in Asia, where they symbolized
happiness, longevity, and peace. European artists used the expressive fruit in still-life paintings; most
notably works by Monet, Renoir, Manet, and Van Gogh. When peaches made their way to the United
States, they became the official fruit of Georgia and South Carolina, and the official state tree fruit of
Alabama. Delaware also named the peach blossom its official state flower and peach pie the official
state dessert.
Why Peaches?
Desserts aside, peaches are a wholesome addition to your diet thanks to their health properties. Notable vitamins are A, C, E, and K. Peaches contain the mineral potassium, which works to maintain healthy blood pressure and helps prevent kidney stones and bone loss. The magnesium, phosphorus, zinc, copper, iron, and calcium found in peaches work to support red blood cells, bones, and the nervous system. Peaches also contain about 2 grams of fiber and chlorogenic acid, which help regulate cholesterol and reduce inflammation, respectively.
Since peaches are naturally sweet – 13 grams of sugar – they are an ideal replacement for added sugars in your diet. They are also an ideal choice for diabetics, as the Glycemic Index value of a peach ranges from 28-56, depending on the size of the fruit. At approximately 60 calories a peach, they are a perfect snack. But if you don’t fancy eating a peach alone, try some of these ideas below to spice up snack and mealtime.

As a topping – use diced peaches as a topping on cereal, oatmeal, yogurt, and cottage cheese.
As an ingredient – blend into salsa and smoothies.
As a garnish – infuse peaches into your lemonade and iced tea.

Fresh Peach Cobbler
Ingredients:
1 cup all-purpose flour
2 tablespoons sugar
1 ½ teaspoons baking powder
¼ teaspoon salt
½ teaspoon ground cinnamon (optional)
¼ cup cold butter
1/3 cup sugar
¼ cup water
1 tablespoon cornstarch
5 cups fresh peach slices
1 egg
¼ cup milk
Vanilla ice cream (optional)
Directions:
Step 1:
Preheat oven to 400 degrees F. For topping, in a medium bowl stir together flour, the 2 tablespoons sugar, baking powder, salt, and cinnamon. Cut in butter until mixture resembles coarse crumbs; set aside.
Step 2:
For filling, in a large saucepan combine the peaches, sugar, water, and cornstarch. Cook over medium heat and stir until slightly thickened and bubbly. Keep filling hot over low heat.
Step 3:
In a small bowl stir together egg and milk. Add egg mixture to flour mixture, stirring just until moist. Transfer hot filling to a 2-quart square baking dish. Using a spoon, immediately drop flour mixture into six mounds of top of filling.
Step 4:
Bake in preheated oven for 20-25 minutes or until topping is golden brown. If desired, serve warm with ice cream.
